Vintage 2001: Red 14°
Soil: A former sheep pasture that has been cleared and is
characterized by rocky calcareous-clay soil.
Yield: 35 to 40 hl/hectare.
Grape Varieties: Syrah 80 %, Grenache 20 %.
Vinification: 5 week maceration. Fermentation temperature maintained at 25°C.
Tasting:
Color: intense purple
Bouquet: intense scent of garrigue, laurel, thyme and a hot touch of pepper.
Palate: full-bodied with a lot of amplitude and length.
Strong yet delicate and melting tannins.
Those who like young wine could drink it now but this cuvee could be left to age for about a dozen years.
Serving Suggestions: Serve at room temperature with red meat in sauce, in particular with a "Gardianne of Beef" (beef with potatoes and garlic), boar or deer. Would also go well with fish in very spicy sauce (Amoricaine)
