Deposit removal with breathing: Syrah deposits removed 5 times, Mourvedre deposits removed 6 times, Grenache deposits removed twice.
Cuvee blended in September 1999:
Syrah 40 %, Mourvedre 20%, Grenache 40 %.
Tasting:
Color: Black cherry with flashes of violet.
Bouquet: spicy scents of nutmeg, pine and licorice.
Palate: Lively attack, powerful yet balanced. Taste of fruit steeped in liqueur and old leather.
Serving Suggestions: Serve at almost room-temperature with jugged hare, boar, sheep cheese or Roquefort, with oriental dishes or chocolate desserts.
