VENDANGE EN VERT (Harvest in Green)

Yield: Syrah 25 hl/ha, Mourvedre 40 hl/ha, Grenache 35 hl/ha

Vinification: One grape variety after another

Length of Maceration: Syrah 25 days, Mourvedre 20 days and Grenache 15 days.

Deposit removal with breathing: Syrah deposits removed 5 times, Mourvedre deposits removed 6 times, Grenache deposits removed twice.

Cuvee blended in September 1999:
Syrah 40 %, Mourvedre 20%, Grenache 40 %.

Tasting:
Color: Black cherry with flashes of violet.
Bouquet: spicy scents of nutmeg, pine and licorice.
Palate: Lively attack, powerful yet balanced. Taste of fruit steeped in liqueur and old leather.

Serving Suggestions: Serve at almost room-temperature with jugged hare, boar, sheep cheese or Roquefort, with oriental dishes or chocolate desserts.
